Valserena is a farm in Gainago di Torrile, near Parma, run by the Serra family since 1879. It is one of the last farmhouse producers of Parmigiano Reggiano, growing its own feed, raising its own herd and making and ageing the cheese on the farm.
Its Parmigiano is made only from the raw milk of Bruna Alpina (Brown Swiss) cows, a rare breed whose rich milk gives a sweeter, rounder cheese, sold as Solo di Bruna. Choose from 24, 36 or more than 60 months of age, or the lightly cultured butter made from the farm's cream.
