What it is
Piparras are slim green chillies from the Basque Country and Navarra, picked young and preserved. They are mild rather than hot, with a gentle tang and a soft bite. In San Sebastián they go on the original pintxo, the Gilda, threaded on a stick with an anchovy and an olive. We stock two producers: Maestros Aceituneros in the small jar and Conservas Almanaque in the large.
How to enjoy
Make a Gilda with Olasagasti anchovies and Perello Manzanillas. Serve alongside Manchego DOP and La Narval sardines, or chop into a salad with Gardeny Jerez vinegar.
