Quesos Valdivieso is a distinguished artisanal cheesemaker located at Finca Valdivieso, a historic family-owned agricultural estate near Campo de Criptana in the heart of La Mancha, Spain. The region is celebrated for its rich cheesemaking heritage and deep ties to traditional Manchego cheese production. All cheeses are produced entirely on-site using traditional farmhouse methods, meaning every step from milk collection to cheese maturation occurs at Finca Valdivieso. This approach enhances the unique character and authentic identity of their cheeses.

Established in 1880, Finca Valdivieso is one of the oldest continuously family-owned farms in La Mancha, dedicated exclusively to breeding Manchega sheep and crafting authentic farmhouse cheeses. Today, the estate is led by Luis de la Vega Yrisarry, a fifth-generation cheesemaker passionately committed to preserving the family legacy through meticulous adherence to traditional cheesemaking methods and sustainable farming practices.

The Valdivieso name in cheesemaking is a storied one, rooted in the heart of Spain's La Mancha region. Established in 1880, Quesos Valdivieso is a distinguished artisanal cheesemaker at Finca Valdivieso, a historic family-owned agricultural estate. For over six generations, the family has been dedicated to crafting authentic Manchego P.D.O. (Protected Designation of Origin) cheese.

Their philosophy is a testament to the "fermier" process, or farmhouse production. This means the entire journey from milk to finished cheese happens on their estate, ensuring a unique and traceable product. The quality of their cheese is directly linked to the careful breeding and care of their single herd of La Mancha sheep, which graze on the natural pastures surrounding the farm.
