What it is
Santoña, on the Cantabrian coast, is Spain's anchovy capital, and Angelachu is a small family cannery there. These are large Cantabrian anchovies, salt-cured, then cleaned and filleted by hand and packed in olive oil: about fourteen fillets to the tin. Plump, meaty and beautifully balanced.
How to enjoy
Serve simply on toast with Le Conquérant butter, or with Bonilla crisps and Perello Gordal olives for an aperitivo.
