The cheese
Le Conquérant Beurre de Baratte is a cultured Beurre d'Isigny AOP from Normandy. Beurre de baratte means churned butter: it is churned the old-fashioned way in a wooden baratte and moulded by hand. Fresh local cream is cultured slowly, for up to 24 hours, before churning.
Tasting notes
The flavour changes with the seasons. Butter made in the early summer flush, when cows graze meadows of wildflowers, is especially golden, soft and floral.
How to enjoy
Serve it at room temperature on good bread, with radishes or over hot vegetables, finished with a pinch of sea salt. Keep it in the fridge, well wrapped. 125g.
