The cheese
Appenzeller has been made in north-eastern Switzerland for more than 700 years. It is made only in the cantons of Appenzell and parts of St. Gallen and Thurgau, from raw cow's milk. As it ages, each wheel is rubbed with a herbal brine whose recipe is a closely guarded secret. The black label marks the Extra grade, matured for at least six months.
Tasting notes
The paste is firm and golden, with small crunchy crystals that come with age. The flavour is bold and spicy, with roasted almonds and alpine herbs, and a long, tangy finish. It is one of the most full-flavoured of the Swiss mountain cheeses.
How to enjoy
Serve it on a board with pickled onions, crispbreads and dried fruit. It melts well in a fondue or a rösti. Pair it with a Pinot Gris, Riesling or Gewürztraminer. Take it out of the fridge an hour before serving. It keeps well wrapped in waxed paper, and a larger piece is a good choice for entertaining.
