The piece
The cleaver is the sturdiest piece in Sabre's Bistrot range, the riveted, bistro-inspired cutlery made in France.
In use
Use it on the cheeses that resist an ordinary knife: a 24-month Parmigiano Reggiano DOP, a Gruyère AOP Surchoix or an aged Gouda. Press down rather than saw, and the blade follows the natural fault lines of the cheese, giving rough, craggy pieces with the crystals intact. It is just as useful in the kitchen for breaking up a bar of dark chocolate.
