The cheese
Mothais sur Feuille is a traditional goat's milk cheese from Poitou-Charentes. Sur feuille means "on a leaf": each cheese matures on a chestnut leaf, which regulates moisture, adds woody, earthy notes and helps its thin bloomy rind grow. Each cheese weighs about 180g.
Tasting notes
The centre is firm and dense, becoming soft and creamy towards the rind. The flavour starts fresh and tangy, then turns rich and nutty with an earthy finish.
How to enjoy
Serve it on its leaf as the centrepiece of a board. Pair it with a Chenin Blanc or a Sauvignon Blanc. Take it out of the fridge 30 minutes before serving.
