Description
The wine
The Chotard family has made wine in Crézancy-en-Sancerre, on the western side of the appellation, since 1789. Daniel's son Simon now runs the domaine and farms organically. The Classique blends equal thirds of three soils: caillottes (small limestone stones) for florals, Kimmeridgian clay (the same as Chablis) for backbone, and a third parcel of small stones over white clay for concentration. Grapes are hand-picked, wild-fermented in steel, acacia and old French oak, and aged for 18 months before bottling.
Tasting notes
Stone fruit and white flowers on the nose, then a tense, concentrated palate where minerality matters more than sharp acidity. Long and very food-friendly.
How to enjoy
Serve at 8–10°C. Sancerre and goat's cheese is a classic Loire match: try Chabichou du Poitou AOP, Crottin de Chèvre or Woodside Edith.
