This French version of the classic Dutch cheese Edam is coloured bright orange with the addition of Annatto, a seed from a bush native to South America. It has a dry, lunar, grey-brown pitted rind due to the introduction early on in the ageing process of cheese mites, which nibble on the rind, continuously exposing more of the pate to air. Very aged cheeses have the appearance of a cannonball, giving the cheese its nickname - Boule de Lille.
The full rounded flavour of the cheese is salty, like beef broth and sweet like caramel.
Mimolette pairs perfectly with Malbec, Merlot, Cabernet Sauvignon and Bordeaux Blends..

It was originally made by the request of Louis XIV, who was looking for a native French product to replace the then very popular Edam. To make it distinct from Edam, it was first coloured using carrot juice, and later seasoned with annatto to give it a distinct orange colour.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
