What it is
Flamigni began as a pastry shop in Forlì, Romagna, in 1930. When the business grew beyond the shop, nougat came first. Torrone is made by whipping honey, sugar and egg white, then folding in nuts. This soft version is tender rather than brittle, with whole almonds throughout.
How to enjoy
Cut it into small pieces and serve with coffee. On a cheese board, it sits well beside shards of Valserena Parmigiano Reggiano DOP 24 months, with a glass of Dominique Portet Brut Rosé.
