What it is
Flamigni has baked in Romagna since 1930, when three brothers opened a pastry shop in Forlì. Their pandoro is made with butter, fresh eggs and fresh milk, and leavened with a natural starter. There is no fruit, so the crumb is soft, light and buttery. Each 1kg cake is wrapped by hand.
How to enjoy
Leave it somewhere warm for a few hours before serving to soften the crumb. Tip the sugar sachet into the bag, shake, then cut star-shaped slices and serve with fresh berries. It is a classic Italian Christmas cake, and a glass of Sadi Malot Blanc de Blancs Champagne makes it an occasion.
