The piece
The girolle was invented in Switzerland for one cheese: Tête de Moine AOP. A central spindle holds the cheese in place, and a curved blade turns across the top to shave it into delicate rosettes. This version is made by Boska, the Dutch cheese-tool maker.
In use
Cut the top rind off a Tête de Moine AOP, push it onto the spindle and turn the handle. The thin curls expose more surface to the air, which brings out the cheese's nutty, spicy aroma. It also works on chocolate blocks and firm butter for garnishes.
