Tête de Moine — "monk's head" — has been made at the Abbey of Bellelay in the Swiss Jura since the 12th century. It carries AOP (Appellation d'Origine Protégée) status, meaning every wheel must be produced in the Bernese Jura from the raw milk of cows that graze the high alpine pastures. The result is a cheese of remarkable intensity: firm and supple, pale yellow, with a natural washed rind and a flavour that is simultaneously nutty, fruity, herbaceous and faintly spicy — the pasture in every bite.
The traditional way to serve it is with a girolle, the small rotating knife designed specifically for this cheese, which shaves the surface into thin, ruffled rosettes. This isn't ceremony for its own sake — the shaving creates a greater surface area, releasing the cheese's aromatic compounds in a way that slicing simply doesn't. The texture becomes silky and almost weightless, and the flavour opens up considerably.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
