What it is
Santoña is the anchovy capital of Spain, and Angelachu is a family workshop there, named for Josefa Ángela García, who started as a filleter as a young girl. The anchovies are caught in spring in the Bay of Biscay, salted and kneaded by hand, then cleaned, filleted and packed in olive oil. The result is plump, rosy fillets with a deep, rounded flavour.
How to enjoy
Eat them on toast with Le Conquérant Beurre de Baratte, or with Guindilla Piparra, Bonilla a la Vista Patatas Fritas and a glass of Casa Mariol Vermut Negro.
