What it is
The larger, premium tin from Olasagasti, Basque fish preservers since the 1800s. The anchovies are salt-cured, cleaned and filleted by hand, then packed in olive oil. Meaty, savoury and mellow rather than harsh.
How to enjoy
Lay over buttered bread with Le Conquérant butter, build Gildas with Guindilla Piparra and olives, or dissolve into pasta sauces.
