The cheese
Il Forteto is a cooperative in the Mugello valley, 30 km from Florence, farming on organic and biodynamic principles. Its Cacio di Bosco is an aged sheep's milk pecorino with shavings of truffle scattered through the ivory paste.
Tasting notes
The paste is firm and smooth. The sheep's milk gives grassy, herbaceous flavours, and the truffle adds a heady, earthy perfume that makes it very moreish.
How to enjoy
Serve it in thin slices with truffled honey, or shave it over pasta, risotto or eggs. Pair it with a Prosecco or a Sangiovese. Take it out of the fridge 30 minutes before serving.
