The cheese
In 1939 there were 202 farmhouse makers of Lancashire. Today only the Kirkhams remain, with Graham Kirkham the third generation to make it from raw milk. Curds from several days' milkings are blended, a slow traditional method that builds complexity. Neal's Yard Dairy then matures the cheeses for nine to twelve months.
Tasting notes
It has a visible crumble that turns rich, buttery and succulent in the mouth, with a rounded yet lively yoghurty tang.
How to enjoy
In Lancashire it's served with something sweet and fruity, so try it with muscatels or dried figs, and it's superb melted on toast. Pair it with a Chenin Blanc or a Riesling. Take it out of the fridge 30 minutes before serving.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
