The cheese
Colston Bassett Dairy was built in the Vale of Belvoir in 1913 to make Stilton, and head cheesemaker Billy Kevan still ladles the curd by hand. Animal rennet is used, and the wheels are pierced later than most, so the cheese ripens for longer before the blue develops.
Tasting notes
The paste is creamy and smooth. The flavour is rich, savoury and biscuity, with a fruity blue tang that builds without turning harsh.
How to enjoy
Serve it with crispbreads, pears or dried figs, or crumble it into a soup. Pair it with a sweet Muscat, a Shiraz or a glass of Bonnezeaux. Take it out of the fridge an hour before serving.
