The cheese
Jonny Crickmore makes Baron Bigod at Fen Farm Dairy in Suffolk, to a Brie de Meaux recipe passed on by a French cheesemaker. The milk comes fresh from his own Montbéliarde cows, the curd is hand-ladled with a traditional pelle-à-brie, and the cheeses mature for up to eight weeks, finishing at Neal's Yard Dairy in London.
Tasting notes
It is rich and buttery, with flavours that change with the seasons, from sautéed mushrooms to roast cauliflower and garlic.
How to enjoy
Serve it at room temperature with baguette and a few muscatels. Pair it with Champagne or a Chardonnay.
