The cheese
Gruyère has been made in western Switzerland for centuries and is protected by AOP status. This one is made by master cheesemaker Michael Spycher at the Fritzenhaus dairy, which is owned by its local farmers, and selected by Gourmino. Spycher is one of the world's most decorated cheesemakers, with several World Champion Cheese titles. Surchoix is the grade given to wheels chosen for longer ageing. This one is aged for at least a year.
Tasting notes
The paste is firm and dense, dotted with protein crystals. The flavour is full and rounded: brown butter, caramel, roasted nuts and alpine flowers, with a long, savoury finish. For all its depth, it stays balanced rather than sharp.
How to enjoy
Serve it on a board with pears, grapes and crispbreads. Grate it into a fondue with Vacherin Fribourgeois AOP for the classic half-and-half mix, or use it in a gratin or French onion soup. Pair it with a Swiss Chasselas, a Pinot Noir or a dry Riesling. Take it out of the fridge 30 minutes before serving.
