La Tur ("the tower" in Piedmontese dialect) is the signature cheese of Caseificio dell'Alta Langa, and one of the most compelling soft cheeses made anywhere in Italy. It is a blend of cow's, sheep's and goat's milk — "tre latte," three milks — each contributing something distinct: cow's milk for body and sweetness, sheep's for richness and depth, goat's for the lift of acidity and that clean mineral edge. The result is a cheese far more complex than the sum of its ingredients.
It arrives looking almost austere — a small, flat cylinder with a wrinkled, lightly dusted rind. Cut into it young and the paste is firm and chalky at the centre, giving way to a softer layer beneath the rind. Allow it to ripen further and the interior relaxes into something almost liquid at room temperature, extraordinarily creamy, with flavours that shift between fresh cream, toasted hazelnut and a gentle earthiness from the bloomy rind.
Serve it at the heart of a cheese board, or on its own with a glass of Moscato d'Asti — the classic local pairing — or a delicate, floral Pinot Gris from Alsace. If you've not tried it before, begin here.
