BLOOM is Brash Higgins’ rare, oxidative Chardonnay aged “sous voile” – under a veil of flor yeast – for seven years in ex-Burgundy barrels, a method used in France’s Jura region as Vin Jaune or yellow wine.

Description

Crafted from Blewitt Springs fruit grown on sandy soils over ironstone, the wine was initially topped periodically adding some fresh white wine to feed the ‘flor’ (flower) or (veil) growing as a natural, healthy protective barrier of yeast on the wine’s surface. The last five years the barrels were turned on their side to prevent any tampering (mainly to keep the winemaker from drinking it as per Brad :)) and to completely seal the bung air tight. No topping was done during this final ageing period. The wine was then aged in a steel tank for an additional 6 months before bottling.

About the winemaker

Brash Higgins is the creative project of American-born sommelier Brad Hickey and McLaren Vale local Nicole Thorpe—a meeting of minds, soil, and a shared curiosity for the unconventional.

After a career in food and wine that took him from New York to Paris, Brad landed in McLaren Vale for a vintage in 2007 and never left. Nicole, whose family had long ties to the region, had planted a small vineyard in 1997 on the distinctive red clay and limestone soils of Omensetter Vineyard. Together, they saw potential in both the land and each other. What followed was a long experiment in pushing boundaries—of grape varieties, winemaking methods, and expectations of what McLaren Vale could be.
