The cheese
Florence is a seasonal goat's milk cheese from Woodside Cheese Wrights in the Adelaide Hills. It is made only from October to April, when the goat's milk is at its richest. The curd is fermented slowly at gentle temperatures, then shaped into a distinctive ring. The shape gives it a large surface for its Geotrichum rind, which grows into a fine, wrinkled coat that ripens the paste evenly. No two cheeses look quite the same.
Tasting notes
Beneath the rind, the paste turns soft and fudgy as it ripens, while the centre stays lighter and fresher. The flavour is subtle and complex: a gentle acidity, a rich creaminess and a clean goat's milk finish.
How to enjoy
Its shape makes it a showpiece on any cheese board. Fill the centre with fresh berries or a spoonful of honey. Pair it with Champagne, a Semillon or a Chardonnay. Take it out of the fridge an hour before serving. Because it is seasonal, it is a good one to try while you can.
