Description

As Florence ripens, its paste transforms, offering a luscious, fudge-like texture beneath the rind, while the flavours develop into a harmonious balance of gentle acidity and nuanced creaminess. The circular shape of the cheese enhances the maturation process, allowing the geotrichum to permeate deeply, resulting in a profile that’s both balanced and refined.
