Vannella Marinated Buffalo Feta
Silky, rich and savoury, a buffalo milk feta marinated in olive oil and herbs.
The cheese
Vannella makes this feta in Marrickville from buffalo milk, which is richer in fat and protein than cow's or sheep's milk, then marinates it in olive oil with herbs. Each jar weighs 300g.
Tasting notes
It is more supple than Greek feta. It holds its shape but melts on the tongue, with a fuller, more complex flavour and a gentle saltiness.
How to enjoy
Use it where feta is the star: over a watermelon and mint salad, in a tomato tart, or in a bowl with olive oil and flatbread. Pair it with an Albariño or a Tasmanian Riesling.
