The piece
Atelier Perceval was founded in Thiers, France's knife-making capital, in 1996, and is best known for the 9.47 table knife designed by chef Yves Charles. The 9.47 kitchen knives carry the same lines into the kitchen, with Sandvik 12C27M stainless steel blades and a choice of pakkawood or olive wood handles. Each is made in Thiers. The Paring Knife 10 is the small one, made for control.
In use
Use it to peel and trim fruit, take the rind off a Comté AOP, or segment citrus. Pair it with the Chef Knife 15, or buy both in the two-knife set.
