N25 Kaluga is one of the most prestigious varieties in the N25 range. Produced at 2,500 metres altitude on the Tibetan Plateau, where constant cold spring water allows sturgeon to be raised for up to 25 years, it comes from Huso Dauricus — the only other sturgeon from the Huso family alongside the legendary Beluga.
The pearls are extraordinarily large and range in colour from hazelnut brown, with a silken, creamy texture. The flavour is deep and layered — pronounced umami, nuance upon nuance, and a remarkably long finish. It is a caviar for those who want the full, generous character that Kaluga is celebrated for.
