What it is
Jole Marabissi opened her pastry shop in Chianciano Terme, Tuscany, in 1948, and her cantucci made her name. Her grandchildren still bake them to family recipes. Cantucci are baked twice, first as a log and then in slices, which gives them their dry, crisp snap. Whole almonds run through every biscuit.
How to enjoy
Dunk them in an espresso, or serve them with a pot of tea. Put the tin out after dinner and let everyone help themselves.
