The cheese
Long Paddock makes Banksia in Castlemaine, Victoria, from certified organic cow's milk from a nearby family farm. It is a Tomme-style cheese, like a Tomme de Savoie or Abondance, aged for six to eight months under a mottled natural rind.
Tasting notes
The paste is firm and elastic yet creamy, with a few small holes. The flavour is sweet, nutty and grassy, growing earthier and more savoury with age.
How to enjoy
Serve it in slices on a board with crusty bread, pickles and fresh apple. Pair it with a Chardonnay or a light red. Take it out of the fridge 30 minutes before serving. Made with animal rennet.
