Description
The wine
Most of the fruit (85%) comes from a grower in the Derwent Valley, with the rest from the North West and Coal River. It is whole-bunch pressed straight to barrel and wild-fermented, with 15% new oak and full malolactic fermentation. A small portion spends five days on skins first for extra texture, and the wine ages on lees for six months.
Tasting notes
Citrus and white peach with gentle nutty oak, a creamy texture and the bright acidity Tasmania is known for.
How to enjoy
Serve at 10–12°C. Pair with Marcel Petite Comté AOP 12 months, Brillat-Savarin IGP or L'Artisan Fermier.
