The cheese
Garrotxa is a goat's milk cheese from the Garrotxa area of Catalunya in northern Spain. It had nearly disappeared when a group of young cheesemakers revived it in 1981. The wheels are aged for about 75 days, forming a velvety grey mould rind.
Tasting notes
The paste is moist and creamy, yet almost flaky. The flavour is milky and delicate, with earthy, herbaceous and honeyed notes, and none of the strong tang many people expect from goat's cheese.
How to enjoy
A goat's cheese for people who think they don't like goat's cheese. Serve it with peppered fig paste, olives and crusty bread. Pair it with an Albariño or a Spanish rosado. Take it out of the fridge 30 minutes before serving.
