Fleur du Maquis — "flower of the scrubland" — takes its name from the aromatic brushes that covers the Corsican hillsides: wild rosemary, savory, and sometimes juniper berries, all pressed into the surface of a fresh sheep's milk cheese. Ottavi is one of the island's most respected producers, and their version is made with the raw milk of Corsican sheep grazed on that same maquis — so the herbs on the outside echo, in a subtle way, what the animals have been eating.
The paste itself is soft and ivory-white, fresh and lactic when young, with a gentle tang and a clean sheep's milk sweetness. As it ages the herbs begin to impart their flavour more deeply into the surface layer, and the paste softens further toward the rind. Eaten young it's delicate and floral; given a few more days it becomes earthier and more aromatic, the savory and rosemary more pronounced.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
