Description
The wine
Domaine Gérard Duplessis is a family estate founded in 1895 and now run by Lilian Duplessis. The vines have been farmed organically since 2007, with certification in 2013. This village Chablis comes from 1.8 hectares across four parcels between the 1er Crus of Vaillons and Montmains, on Kimmeridgian limestone. The vines are 20 to 60 years old. It is wild fermented and spends 10 to 12 months in tank before bottling.
Tasting notes
This is the clean, linear style the domaine is known for. Citrus and orchard fruit sit over a chalky, saline core, with bright acidity. The old vines add depth and length without weight.
How to enjoy
Serve at 8–10°C. It is lovely with oysters and grilled fish, and with goat's cheese such as Chabichou du Poitou AOP. A young Marcel Petite Comté AOP 12 months works well too.
