Description

The wine

Brash Higgins is the project of sommelier Brad Hickey and McLaren Vale local Nicole Thorpe. Bloom is Blewitt Springs Chardonnay from sand over ironstone, aged sous voile (under a veil of flor yeast) for seven years in ex-Burgundy barrels. At first the barrels were topped up to feed the flor. For the last five years they were turned on their side and sealed, with no topping. A final six months in steel tank came before bottling.

Tasting notes

Expect the hallmarks of flor ageing: roasted nuts, dried citrus peel and savoury spice. The palate is dry, tangy and very long.

How to enjoy

Serve at 12–14°C rather than fridge-cold, and give it time in the glass. Like vin jaune, it is at its best with mountain cheeses: Marcel Petite Comté AOP 24 months, Beaufort d'Alpage AOP or Valserena Parmigiano Reggiano DOP 36 months.

About the winemaker

Brash Higgins is the creative project of American-born sommelier Brad Hickey and McLaren Vale local Nicole Thorpe—a meeting of minds, soil, and a shared curiosity for the unconventional.

After a career in food and wine that took him from New York to Paris, Brad landed in McLaren Vale for a vintage in 2007 and never left. Nicole, whose family had long ties to the region, had planted a small vineyard in 1997 on the distinctive red clay and limestone soils of Omensetter Vineyard. Together, they saw potential in both the land and each other. What followed was a long experiment in pushing boundaries—of grape varieties, winemaking methods, and expectations of what McLaren Vale could be.
