The cheese
Scamorza is a southern Italian stretched-curd cheese, shaped into a pear, tied at the neck and dried briefly to form a thin, smooth skin. Vannella makes this bianca (unsmoked) version fresh in Marrickville. Each scamorza weighs about 230g.
Tasting notes
Fresh, it is bouncy and close-knit, with a clean, lactic flavour and a faint sweetness. Heated, it pulls into long, glossy threads.
How to enjoy
Slice it over a tomato salad, or melt it on pizza, grilled vegetables or baked pasta. Pair it with a light red such as a Pinot Noir or Barbera, or a sparkling wine.
