What it is
Manzanilla is the olive Spain eats most: green, firm and meaty, with a lightly bitter, briny flavour. Perelló marinates them with guindilla chillies for a mild heat that builds slowly. Smaller than the Gordal, they are the one to snack on by the handful.
How to enjoy
Put out with Bonilla a la Vista Patatas Fritas and Guindilla Piparra, toss through a salad, or add one to a Taylor & Smith Dirty Martini. Save the brine for the martini.
