What it is
Up to twelve small sardines, cooked in seawater, gently dried, then packed with chilli in sunflower oil. The drying lets them take up the flavour of the oil and firm up again in the tin. They are rich, oily fish with a warm, steady heat.
How to enjoy
Pile onto toast with sliced tomato, or break through pasta with lemon and parsley. A good match for a crisp white such as Perlage Pinot Grigio.
