What it is
Bonito del Norte (albacore) is the tuna Spanish conserveros rate most highly, and it is at its fattest as it migrates along Spain's northern Atlantic coast. La Narval uses only the ventresca, the prized belly, from fish caught one by one on pole and line. It is preserved in Galician butter, a historic technique that adds richness while the tuna stays clean and juicy.
How to enjoy
Warm the tin gently and serve the belly on toast with its butter, or flake over boiled potatoes and green beans. A treat with Le Domaine d'Henri Chablis.
