What it is
This mackerel is a milder, more delicate species, caught in the Gulf of Cádiz by small inshore boats. Each fish is peeled by hand with a knife, never with chemicals or machines, which keeps the fillets clean, firm and well defined. Packed simply in olive oil.
How to enjoy
Serve at room temperature on toast with Acide Pickled Florence Fennel, or flake into a potato salad with capers and herbs.
