What it is
Castell de Gardeny is run by the Badia family in Lleida, Catalonia, master vinegar makers since 1908. For this one they go to Jerez: Vinagre de Jerez DOP comes only from the Jerez region of Andalucía and is aged in oak casks. Reserva means at least two years in cask, giving a deep, nutty, complex vinegar.
How to enjoy
Essential for gazpacho and salmorejo. Splash over lentils or roast vegetables, finished with Mount Zero Picual.
