The cheese
Manchego is Spain's best-known cheese. Only cheese made in La Mancha from the milk of Manchega sheep can carry the name and its DOP seal. Valdivieso is a true farmhouse producer: the family keeps its own flock on its estate in La Mancha, and every step from milking to maturing happens on the farm. The milk is used raw, and the cheese is pressed in moulds that leave the classic zigzag pattern on the rind.
Tasting notes
The paste is ivory, firm and slightly springy. The flavour is buttery and nutty, with a gentle sheep's milk tang and a grassy sweetness from the raw milk. It has far more character than most supermarket Manchego.
How to enjoy
Serve it in thin triangles with peppered fig paste and green olives. Pair it with a Spanish Mencía, an Albariño or a dry rosado. It also grates well over roast vegetables and melts into a toasted sandwich with salami. Take it out of the fridge 30 minutes before serving, and keep it wrapped in waxed paper between uses.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
