The cheese
Long Paddock makes Granite in Castlemaine, Victoria, in the tradition of Somerset cheddar. Each cheese is bound in layers of cotton cloth and lard, then aged for 10 to 12 months while a complex rind develops. The mottled grey rind looks just like granite.
Tasting notes
The paste is dense, moist and buttery but crumbly. The flavour is deeply savoury, with grassy, buttery and earthy layers, a gentle acidity and a long finish.
How to enjoy
Serve it ploughman's style with pickles and chutney, or with dried fruit. It also makes an excellent toastie. Pair it with a Syrah or a Shiraz. Made with animal rennet and lard, so not suitable for vegetarians.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
