The cheese
Raclette takes its name from racler, French for "to scrape". This semi-hard washed-rind cow's milk cheese from Savoie is made to be heated until it bubbles, then scraped straight onto the plate. In style it sits somewhere between a Comté and a Reblochon.
Tasting notes
Unmelted, it is supple, with a dense, fruity flavour. Melted, it turns smooth and creamy, and the washed rind adds a savoury, gently earthy note.
How to enjoy
Melt it over potatoes boiled in their skins, with cornichons, pickled onions, salami and a green salad. A raclette grill makes it easy, but an oven works too. Pair it with a Savoie-style white such as Chasselas, or a light red such as Gamay.
