The cheese
Cornish Kern is made by Lynher Dairies near Truro in Cornwall. It is a hard cow's milk cheese inspired by Gouda, made with added Alpine-style starter cultures, and Kern is Cornish for "round". The wheels have a black coating that blooms white over time, and are matured for up to two years by Neal's Yard Dairy in London.
Tasting notes
The texture is hard and waxy. The flavour is rich, sweet and nutty, with the bright notes that come from the Alpine cultures.
How to enjoy
Serve it in thin slices with apple, or grate it over pasta. Pair it with a Chardonnay or a Côtes du Rhône Blanc. Take it out of the fridge 30 minutes before serving.
