Savoury and mellow when young, nutty and rich with age, the original raw milk Red Leicester.
The cheese
Traditional raw milk, cloth-bound Red Leicester had been extinct for 50 years when David and Jo Clarke revived it in 2005 at Sparkenhoe Farm in Leicestershire. They use milk from their own Holstein-Friesian herd, animal rennet and annatto, the natural plant colour behind its deep orange. Each cheese is bound in cloth and lard.
Tasting notes
As it matures, the texture firms and the flavour deepens from savoury, smooth and mellow to nutty and rich.
How to enjoy
Serve it on a board with chutney and crusty bread, or grate it for the best cheese on toast. Pair it with a fruity red such as a Côtes du Rhône. Take it out of the fridge 30 minutes before serving.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
