The cheese
Roquefort is made from the raw milk of Lacaune sheep and matured in the limestone caves of Mont Combalou at Roquefort-sur-Soulzon. Carles is one of the last small family producers, and it still grows its own Penicillium roqueforti on rye bread baked in-house.
Tasting notes
The texture is creamy with a slight grit. The flavour is a powerful mix of steely blue minerality and salty tang, fruitier and better balanced than most Roqueforts.
How to enjoy
Spread it on honey and walnut lavosh, or serve it with pears, dried figs or honey. The classic match is a sweet white from France; try a Bonnezeaux or a Muscat de Beaumes de Venise. Take it out of the fridge an hour before serving.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
