The cheese
Pecora Dairy describe Yarrawa as Australia's first uncooked raw milk cheese. It is made in Robertson from their East Friesian ewes' milk and named after the local word for Robertson's cool-climate rainforest. Only simple starter cultures are used, so the farm's own yeasts and moulds shape the natural rind over at least three months.
Tasting notes
It recalls the sheep's milk cheeses of the Pyrenees. The paste is supple, with hints of butter, cashew, caramel and fresh grass.
How to enjoy
Serve it in slices with peppered fig paste or fresh apple. Pair it with a Pinot Noir. Take it out of the fridge 30 minutes before serving.

Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
