The cheese
The Holden family have farmed Bwlchwernen Fawr in west Wales since the early 1970s, and began making Hafod in 2007. It is made from the organic milk of their Ayrshire herd, following a classic 1917 cheddar manual. Hafod is Welsh for 'summer place'.
Tasting notes
The texture is supple, and it is less acidic than many cheddars. The flavours are rich and layered, ranging from earthy and grassy to oniony, with a bit of bite.
How to enjoy
Serve it with crusty bread, apple and a spoonful of chutney. Pair it with a Cabernet Sauvignon, a Shiraz or a Bordeaux. Take it out of the fridge 30 minutes before serving.

How will my order arrive?
Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
