The piece
Atelier Perceval was founded in Thiers, France's knife-making capital, in 1996. In 2005 the Parisian chef Yves Charles asked the workshop for a table knife for his restaurant, and the result was the 9.47. It is a table knife of choice for Michelin-starred chefs. This one has a light, fresh sky-blue handle.
In use
The 9.47 has a fine, smooth edge rather than serrations, so it slices a rare steak, roast lamb or duck cleanly instead of tearing it. Buy one for each guest, mix colours around the table, or choose a boxed set of six in this colour. Two, four or six knives come in a Perceval presentation case. Pair them with Le Sommelier, Perceval's Thiers-made corkscrew.
