The cheese
Michael and Cressida McNamara founded Pecora Dairy in 2011 in Robertson, in the Southern Highlands of NSW. Their flock is pure East Friesian sheep. Bloomy is a mould-ripened fresh ewe's curd cheese with a delicate, ash-dusted ivory rind.
Tasting notes
Just beneath the rind it turns gooey and oozes as it matures. The centre is dense, rich and smooth, slightly chalky, with notes of citrus and a lingering crème fraîche finish.
How to enjoy
Serve it whole with crackers and fresh pear or figs. Pair it with a delicate white or a dry rosé. Take it out of the fridge an hour before serving.

How will my order arrive?
Temperature-sensitive orders are packed with insulation and ice packs to help them arrive in great condition. Couriers are instructed to leave parcels in a safe place where possible. If re-delivery is required, a re-delivery fee may apply.
